Recipe: Garlic-Broccoli Pasta with Italian Vinegar
Featuring Chaparral Gardens Artisan Vinegars’ savory Italian vinegar, this recipe for garlic-broccoli pasta is fast and delicious. Consider serving it with your favorite style of chicken or shrimp.
Our Italian Vinegar is made with all of our fresh herbs grown here on the farm: oregano, rosemary, thyme and a hint of garlic. This is our only savory vinegar. We love using the Italian as a steak marinade. Use a couple tablespoons per steak in a ziplock for two hours and then throw on the grill with a little salt and pepper. Yum!

Ingredients
- 1/2-pound pasta
- 1 head of broccoli, cut into florets
- 1 onion
- 6 or more garlic cloves
- 1/2-cup olive oil
- salt and pepper to taste
- 5 Tbs. of Chaparral Gardens Italian Vinegar
- 1/3-cup of grated parmesan cheese
- A squeeze of lemon and finely chopped parsley for garnish
Cook your favorite pasta (spiral pasta or shells always look great).
Sauté onions and garlic in olive oil. Add broccoli florets and sauté (try not to overcook).
Add all ingredients to pasta and mix. Top with Chaparral Gardens Italian Vinegar, a squeeze of lemon, a little parsley and a drizzle more of olive oil.
